- That's down **$17,910**. Margin went from **11.9%** to **2.5%**.

- Food cost, beverage cost and payroll took **65.1%** of net revenue, up from **58.6%** in August.
- Against a **60%** target, September ran **$8,936** over.

Prime cost is the number to watch every week, not every month. Get it back to 60% or below.
